Chicken Chimis

Good morning everyone.I just thought I would share this delicious recipe with all of my blogging buds out there.I have been wanting to make these for awhile after finding the recipe in my new Gooseberry Patch cookbook.This is the first of many that I have found in this wonderful book. Chicken Chimis
2 boneless skinless chicken breasts,cooked and shredded
salt,pepper and garlic salt to taste
1 Tablespoon butter
10 8" flour tortillas
8 oz package shredded monterey jack cheese
6 green onions chopped
1 Tablespoon vegetable oil
Toppings-sour creme,salsa,guacamole

First of all I doubled this recipe.Are they kidding? only 2 chicken breasts!My family happens to be big eaters.I boiled my chicken first but you can microwave it also.I let it cool a bit and then shredded with 2 forks. Sprinkle chicken with seasonings.Heat butter in large skillet,add chicken and saute 3 minutes(I like my chicken done so I turned it and cooked another 3 minutes).Spoon chicken evenly onto tortillas.Top with cheese and green onions;fold up sides and roll up,burrito style.Heat oil in large skillet on med high heat and add rolled up tortillas & saute until golden brown.Watch very carefully so they don't get too brown.I just put 2 at a time in the skillet.This made 8 chimis but I put quite abit of chicken in each one.Serve with choice of toppings.
These were YUMMO! I used shredded lettuce, salsa and sour creme,extra cheese and served with mexican rice.I wanted refried beans but didn't have any on hand.
That's it for now. Hope someone out there tries these.It really is a super easy quick dinner and is very good.Until next time,

Thanks for sharing this recipe I picked this up and looked at it at Walmart the other day. I haven't gotten it yet I have a long list of wants from Gooseberry patch right now.
